For sure a good sized serving of a creamy rice pudding either warm or cold is way up on the list of comfort foods...but so are the calories and fat!
Why not take a look at this basic recipe with the low or fat free adjustments made. You can make it your "signature" rice pudding dish for now, and for
generations to come...Sitting in our rocking chairs at the "ol folk's home and remembering back with the family begged for "Granny's or Grandpa's creamy rice pudding. Ah, sweet memories, rocking away...we would never have to know about their rice pudding food fights....would we?

Creamy Reduced-Fat Rice Pudding:

1 - cup uncooked long-grain rice = will fluff to 3 cups cooked
1 - 12 ounce can evaporated "fat-free" milk
1 1/2 - cups fat-free milk
1 tsp vanilla extract
1/4 cup brown sugar...light would be the best choice.

Place all ingredients in 1 - 1 1/2 quart saucepan...nothing larger. If a larger pan is used with small amounts of ingredients, the shallow depth of the milk and rice will open your dish up to potential sticking, scalding or down right burning. Stir slowly and constantly over medium heat until bubbles appear around the inside rim of the pudding. Immediately turn heat down to low, adding a bit more milk if needed. Cook for 20 minutes.

The recipe calls for a few spices and other options to be added. I think most of us know what is generally used, but why not share a few ideas about what works for ourselves or family in our own home and/or homeland! Deedee

I must have at least two-three tablespoons of cinnamon in mine, along with raisins

I saw a recipe which had pumpkin in it. Sounds interesting.....three fourths of a cup, normally.

Bread pudding is another one of my favorites....can be really creative making that comfort food "your own"! I can agree with the raisins, but "pumpkin"....are you out of your gourd? PUMPKIN would be wonderful! Hmmm, what other wonderful baked rice desserts can be made from my recipes basis beginning???

i had a rice pudding once at a church supper that had caramel sauce drizzled over it. true ambrosia! no doubt about it!

I love rice pudding warm with cream added but no raisins please!. I also enjoy bread pudding with no raisins as well. I know, the purists think that I am crazy but I don't care for cooked raisins.

Hi Barb....thanks for joining in on the topic! Have you ventured adding anything else beside raisins to the bread pudding or rice pudding? For sure without anything is delish...just curious...

Bread pudding with a warm bourbon sauce is about the best thing ever. Talk about your comfort food!!
