I was wondering if anyone had any interesting ideas for avocado other than guacamole?

There are several delightful avocado soups. Truly yummy too.

The type I make is Mexican.

Here is one recipe, but there are zillions on the Net.

4 cups vegetable or chicken stock
1 cup heavy cream
1 chili pepper, as hot as you dare (from banana to habanero)
1 garlic clove
2 avocados
salt and white pepper
Garnish: cilantro, finely chopped, with crisp tortillas, fried in lard or oil, on the side.
Heat the stock and cream and keep at a simmer. Puree the chili pepper and garlic in a blender, then add avocado. When ready to serve, gradually add the hot stock mixture and blend until smooth. Season to taste and either serve immediately with cilantro topping and chips on the side--or refrigerate immediately to make a cold soup. Avocados turn bitter when heated, so be careful.

Top crackers or small toast wedges with a thick spread of avocado, a bit of cracked black pepper, then crumbled crispy bacon. Add a few shreds of cheese, then pop under the grill just long-enough to melt the cheese a bit. ...Yum!

Hi, new here....

I smash up some avocado and use instead of mayo on
sandwiches, especially veggies. Much better for you and
tastes rich. Get good fat not bad, too.
