SPICY SAUSAGE HOTPOT

Just the thing for cold weather!

Buy assorted spicy sausages such as Kransky, Chorizo, Italian, Mexican, herb and garlic, chicken etc. Steam the sausages to cook them, and to remove fat and skin.
When cooled a bit, cut the sausages into bite-sized pieces and keep in the freezer till required.

HOTPOT
Take a large handful of the spicy sausage pieces and put in saucepan with a splash of olive oil, and sliced onions. Add some crushed garlic, and cook till onion is clear.
Add a can of chopped tomatoes, and a can of drained lentils or beans. (your choice as to variety)
Simmer ten minutes and serve.

Serve with either mashed potatoes, cooked rice, cooked pasta, polenta wedges or crusty bread.

Variants:
1] Add chopped chilli peppers for a bit of bite.
2] Add chopped celery for hi-fiber and texture.
3] Add a teaspoon or two of cumin to give a bit of smoky, spicy bite.
4] Add sliced bell peppers for color and texture.
5] Add chopped fresh oregano, parsley and basil.

VERY yum!
