BOILED IRISH DINNER

Boiled Irish Dinner

1 lb. Polish or smoked sausage
1 large onion
4-5 medium carrots
4-5 medium potatoes
1 head cabbage, cut into 8 wedges, remove core
3 cans chicken broth
1 tablespoon sugar
1/2 teaspoon red pepper flakes
salt & pepper to taste

Slice sausage, carrots, and onion into 1/2 inch slices, place in a large pot and add broth. Bring to boil, reduce heat, cover with lid and simmer 10 minutes.

Cut potatoes into bite sized chunks and add to pot. Add hot water, if needed, to cover the mixture. Bring to boil, reduce heat, cover with lid and simmer 10 more minutes.

Add cabbage and sprinkle with sugar and red pepper flakes. Add hot water, if needed, to cover everything in the pot. Bring to boil, reduce heat, cover with lid and simmer for 5-10 more minutes until cabbage is tender. Season to taste.
