Chinese Rice Casserole

1 lb. fresh ground pork or pork chops cut into small pieces (chicken can also be used)
1 onion, chopped fine
1 large green bell pepper, chopped

Brown meat, add onion and green pepper and saute well.

Transfer to shallow casserole dish, preferably 10x10 or comparable size oblong dish.

½ cup uncooked rice
2 pkg. Lipton Chicken Noodle Soup Mix
3 cups boiling water.

Mix well, being sure that soup mix is dissolved.

Bake uncovered at 350 for 1 hour.

Remove from oven.

Stir in:
1 tsp. Soy sauce
1 cup celery, cut in ½ inch pieces
1 can sliced water chestnuts, drained
1 can bean sprouts, drained

Return uncovered to oven for additional ½ hour. Remove from oven.

Cover with lid to keep warm and moist until served.
