I was wondering if anyone had a good recipe for a casserole using tuna, asparagus and a pasta like elbow macaroni. I love casseroles.

hi Cathy i hope you like this one. Many casseroles call for canned "cream of ___ soups". They are okay in a pinch but i like to make my own white sauce and then add cheese and seasonings. A can of cream of mushroom or cream of asparagus soup plus 1/2 a cup of milk could be substituted for white sauce here if you prefer.

Cheesy Asparagus Tuna Casserole

* 1 (16 ounce) package medium seashell pasta (or elbow)
* 1 (12 ounce) can tuna, drained

* 2 pounds fresh asparagus, trimmed and cut into 1 inch pieces
* 8 ounces fresh mushrooms, sliced
* 3 garlic cloves, minced (or pressed)
* 2 tablespoons olive oil

* 3 tbsp. flour
* 3 tbsp. butter
* 1 cup evaporated milk
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons fresh basil, snipped (or 1 teaspoon dried)
* 1/4 cup chopped pimento, drained

* 2 cups shredded Cheddar cheese, divided
* 1/2 cup grated parmesan cheese

Preheat oven to 350 degrees F.

Cook macaroni according to package directions; drain and set aside in a large bowl.

Saute asparagus and mushrooms with garlic in olive oil until tender. Add to bowl of macaroni. Stir to combine.

Melt butter in a 2 quart saucepan over medium heat, blend in flour, salt and pepper, making a smooth paste. Whisk in milk. Cook and stir constantly over medium heat until mixture thickens and boils. Remove from heat and stir in 1 cup cheddar cheese until melted. Add basil and pimento.

Mix cheese sauce thoroughly into macaroni and vegetables. Gently fold in flaked tuna. Pour into a greased baking dish. Top with remaining cheddar cheese and parmesan and bake at 350 degrees until heated through and cheese is lightly browned, 20-30 minutes.
