Nanaimo Bar

Base: 1/2 cup butter, 5 Tbsp. sugar, 5 Tbsp. cocoa, 1/2 Tsp. vanilla, 1 egg, 2 cup crushed graham wafers, 1 cup coconut & 1/2 cup walnuts.

Mix wafer crumbs, coconut, & nuts together in bowl. Place softened butter, sugar, cocoa, vanilla & egg in a bowl, set bowl in a pan of boiling water, stir until butter has melted & it is the consistency of custard. Remove from heat, add crumb mixture, pack into 9" pan.

Center: 4 Tbsp. butter, 2 Tbsp. vanilla custard pudding powder (Bird's), 2 Tbsp. milk & 2 cup icing sugar

Cream butter, combine custard powder & milk, add to butter, mix in icing sugar, spread over chocolate base & allow to harden.

Top: Melt 2 squares semi-sweet chocolate & 1 Tbsp butter. Spread evenly over custard & refrigerate

Allow to warm a few minutes before cutting. Don't substitute butter or use Jello pudding mix but you can use pecans, etc. May be doubled. Yummy

I had never heard of Nanaimo before, so I just googled it. In case you need help in our next Capitals WP, it is the "Bathtub Racing Capital of the World".

I like different variations too, Randy. We have peanut butter, irish cream, and coffee flavored bars.

I have been known to eat this until I was absolutely physically ill and still managed to shove in one more. I'm no quitter!

Capital of the World" What an honour!!!!

I think there's a little man in a booth who has two piles of paper
on his desk. One pile has names of Places, and the other pile has
Names of Things. He puts them together - one in each hand - and then
enters the pairings on Google!!!! The only qualification for his job
is....he has to drink ? bottles of Malt Scotch before work each day!!!!

I'm all for the idea of a get together once we're settled. My girlfriend (73boo) is a chef too, and loves an opportunity to cook for more than just me. How do you feel about cocker spaniels?

This sounds delicious....I guess I'm not sure what Birds custard powder is....I'm from Florida, U.S.....Is it similar to the Jello pudding mix that you say not to use? Where would it be located @ the grocery store? Thanks for sharing....

Carolyn, it's probably in the "Baking items" like cake mixes etc...
Reminds me of the old rhyme...."yellow matter custard, green snot pie....."
Don't mind me - I was just on the the TEACHERS thread, reading all the posts,
so now I'm feeling like a school girl again....

Brad....yes I WAS looking forward to HOT DOGS!!!! With onions and mustard!!!!
So it seems we are all three doggy people.

This sounded so delicious that I googled for a little history on these bars- delightful! My question about the Bird's powder has been already been asked. I know I've seen it - maybe at here at Wegman's or else in Canada, I can't remember which so I'll have to check at Weggies next time I go. In any event this sounds good enough to make the trek to Ft Erie in search of it!!

I found both Foster Clark & Horne's Vanilla Custard Powder, maybe those are available in the States. I saw some recipes where they used Jello instant vanilla but it won't taste the same. Bird's is a General Foods product.

Nanimo bars bring back wonderfull memories of when I lived on Vancouver Island, it was great, the island and the bars, got a nice 3inch scar from tripping on the beach of Gabriola Island when I was 9, good times. Hey my husband is a chef too, what are the job oppertunities up that way like for chef's???? Definatly a recipe worth making, or having someone make for you!!! Yum Cathy
