Happy Birthday Lodi!

Coconut-Lemon Cake

1 c. unsalted butter, softened
2 c. sugar
4 lg. eggs, separated
3 c. all-purpose flour
1 T. baking powder
1 c. milk
1 t. vanilla extract
1/8 t. salt
Lemon Filling (recipe below)
Fluffy White Frosting (recipe below)
1 c. flaked coconut
Garnish: Fresh cranberries, boxwood sprigs (we've never used those)

* Beat butter at medium speed with an electric mixer until fluffy; gradually add sugar, beating well. Add egg yolks, one at a time, beating after each addition.

* Combine flour and baking powder; add to butter mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in vanilla.

* Beat egg whites and salt at high speed with an electric mixer until stiff peaks form. Stir about one-third of egg whites into batter; fold in remaining egg whites. Spoon batter into 3 greased and floured 9-inch round cakepans.

* Bake at 350º for 18 to 20 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks.

*Spread Lemon Filling between layers. Spread Fluffy White Frosting on top and sides of cake. Sprinkle top and sides with coconut; garnish, if desired. Yield: 1 (3-layer) cake.

Lemon Filling

1 c. sugar
1/4 c. cornstarch
1 c. boiling water
4 egg yolks, lightly beaten
1/3 c. fresh lemon juice (we use the bottled stuff and it's just fine)
2 T. butter

* Combine sugar and cornstarch in a medium saucepan; stir in water. Cook over medium heat, stirring constantly, until sugar and cornstarch dissolve (about 3 minutes). Gradually stir about one-fourth of hot mixture into yolks; add to remaining hot mixture, stirring constantly with a wire whisk. Stir in lemon juice.

*Cook, stirring constantly, until thickened. Remove from heat; stir in butter. Cool, stirring occasionally. Yield: 1 2/3 cups.


Fluffy White Frosting

1 c. sugar
1 1/2 c. water
2 T. light corn syrup
4 egg whites
1/4 t. cream of tartar

*Combine first 3 ingredients in a small heavy saucepan; cook over medium heat, stirring constantly, until clear. Cook, with stirring, until mixture reaches soft ball stage or candy thermometer registers 240º.

* Beat egg whites and cream of tartar at high speed with an electric mixer until soft peaks form; slowly add syrup, beating constantly. Beat until stiff peaks form and frosting is desired consistency. Yield: 7 cups.

OR-I would just go to Epicure (our fancy schmancy market on South Beach) and buy one

This is the best cake I've ever had an if someone makes it for me, I'll sing & dance at their next wedding.....

5 Day Coconut Cake

3 6 oz. packages frozen coconut
2 cups sugar
8 oz. sour cream
1 yellow cake mix (Duncan Hines Butter Recipe Golden is recommended)
2 Tbs sugar
1 container Cool Whip

Mix together coconut, 2 cups sugar, and sour cream. Refrigerate.

Bake the cake (in 2 9 inch round pans) as directed, but use milk instead of water and add 2 Tbs sugar.

When the cake is cooled, split each layer in half (horizontally). Place 1/4 of the coconut mixture in between each layer. Do not add coconut mixture to top of last layer. Reserve the remaining ¼ cup of coconut mixture. Cover the cake and refrigerate for five days.

On the fifth day, mix the last ¼ cup of coconut mixture with a container of Cool Whip. Use this to frost the cake two hours before serving. Refrigerate until and after serving.

Rum Cake

1 Tsp. Sugar
1 or 2 Quarts of Rum
1 Cup Dried Fruit
Brown Sugar
1 Tsp. Soda
1 Cup Butter
2 Large Eggs
1 Cup Baking Powder
3 Juiced Lemons
1 Cup of Nuts

Before starting, sample rum to check quality. Good, isn't it? Now proceed.

Select large mixing bowl, measuring cup, etc.

Check rum again. It must be just right. To be sure rum is of proper quality, pour one level cup of rum into a glass and drink it as fast as you can. Repeat.

With electric mixer, beat 1 cup of butter in a large fluffy bowl.

Add 1 seaspoon of thusar and beat again.

Meanwhile, make sure rum is still alrighty. Try another cup. Open second quart if necessary.

Add leggs, 2 cups of fried druit and beat til high. If druit gets stuck in beaters, pry loose with drewscriber.

Sample rum again, checking for tonscisticity.

Next, sift 3 cups pepper or salt (really doesn't matter).

Sample rum.

Sift 1/2 pint lemon juice. Fold in chopped butter and strained nuts. Add 1 bablespoon of brown sugar-or whatever color you can find. Wix mell. Grease oven. Turn cake pan to 350 gredees. Pour mess into boven and ake.

Check run again and bo to ged.
