BANANAS? goes...

My father-in-law was given like 30 pounds of bananas from the local market ("Merry Christmas"). Orthodox Christmas is this Sunday, my mother-in-law said to bring desert.

Any tried and tested recipes for banana deserts? Bread? Pie? Whatever?

This may be totally heretical, but we always keep a few bananas in the freezer. They keep wonderfully, and are yummy sliced thin over ice cream. I figured that they sell them frozen at street stands, so why not? You can, of course, dip them in chocolate before you freeze them. We also have a bag of chocolate dipped chunks of banana in the freezer. Unexpected company - there you go! Alice

We're like BigBird. We keep a number in the freezer. We find they work really well for banana bread that way.

Frozen bananas are also fantastic for smoothies! They make them wonderfully creamy without the fat of ice cream.

Easiest banana pudding recipe:

Get a big bowl & line it with vanilla wafers.

Cover them with a layer of sliced bananas.

Mix up some instant pudding (banana flavor is always a good pick). Pour enough in to cover the first layer of cookies & bananas.

Repeat layering the vanilla wafers & bananas & pudding until the bowl is full, or you run out of ingredients.
