MOUNT VERNON COLONIAL PEANUT AND CHESTNUT SOUP - :P - FROM MT. VERNON INN IN MT. VERNON, VIRGINIA

1/4 cup margarine
1 tablespoon flour
1 quart imitation chicken broth
1 quart water
1 cup smooth peanut butter
1/2 cup unsalted peanuts, chopped
1 tablespoon Worcestershire sauce
1/2 cup water chestnuts, chopped (optional - I don't bother with them)
Combine flour and margarine to make a roux. Add broth and water and bring to a boil. Add peanut butter and Worcestershire sauce and stir. Keep on low heat until ready to serve. Garnish with chopped peanuts and water chestnuts.
DELICIOUS!

How odd...I was just telling my stepson about an Indian Peanut soup that I used to make but have lost the recipe for. It was served with curried banana on top...gave all new meaning to peanut butter and banana!
