Soft cheese like Brie (made with penicillium mold) is contrary to hard cheese like Parmesan (used for grating) and different from Blue cheese (like Roquefort) though all can make good salad dressing. You have semi-hard cheese (like cheddar) and cheese named after the place of origin (like more holy than righteous Swiss). None of these cheeses made from cows milk are like goat's milk cheese (like Banon). |
