|Nowadays we take for granted food that keeps longer than overnight before going off, healthy options for most foods that would otherwise be extremely bad for us - and the fact that almost no-one ever gets gout anymore! However, two hundred years ago during the English Regency (1811-1820 - when George III was declared mad and his son George, eventually to become George IV, was Prince Regent), they had almost none of the facilities, methods and ingredients that we have - and with no nutritional research to find out what they *should* have been eating they just ate what they wanted and could afford - which for the wealthy meant rich foods, both in cost and content!
